holding shift, ctrl, alt, or any combination of those when booting up the game will usually bring up the unity launch option. It works for the live version, but doesn't in the beta.

It seems Unity deprecated and removed the Display Resolution Dialog in 2019.1. We'll have to figure out another way to handle this!
