Most people here seem to only think "oh, it's just social game" and such, but considering how Udon is being pushed more and more, have you thought about other actions in VRChat than staring at the mirror?
Many games that world makers do are pretty awkward to play when connecting outside of NA. One of good examples is recently published Freeze Tag world. It's a wonderful world and great fun, but it gives EU folks many issues. Freezing players is EXTREMELY delayed so players can abuse this by saving few people while you can't do anything but hope that the server catches up with the fact that he should be already frozen. I'm not saying that NA people might have zero delays and such, but 250 ping is NOT helping at all.
If you are going to introduce Udon to us with all these cool concepts and games you can do, please let us at least host it ourselves. It doesn't make any sense for an instance filled with EU boys to be stuck in NA servers.

Mara: Well you do bring up a good point, a listen server would be nice for such cases assuming it can be secure (I.E. not leaking IP's)

As someone that played the Game for over 2 Years now i can just say, me having between 100-200 ping never was a Problem.
No Lag in either Players , Myself , Voice or other stuff.
And they really cant do stuff like that, since they dont have Limitless Funds/Money to just put Servers everywhere or Rent Servers.

Germany here, never had any issues with VRChat lagging server wise before, rather the opposite, I think its insane how smooth and clear everyone sounds even if they come from asia or NA

Or better, leave an "executable" that everyone can download to "host an instance of vrchat servers or map download servers

Well, at the end its makes no difference to me, most of time on join on some other people and all people in given instance would need to be still connected to single server, so... I would probably need to connect to usa/japan quite often anyways. Tho more servers could improve games made with udon when playing with few friends from one location so +1 anyways.

Ping in a social game like VRChat isn't that much of an issue imo. Sure packet loss and bufferbloat would affect it but that likely has more to do with your internet connection / router.

I play with 200 ish ping (I'm in NZ) and it's fine for me
