It will not "stop ripperstore in its tracks" as if something has been encrypted it can always be decrypted.
If someone can see something then they can rip it.
The avatar's data has been downloaded to their device and unpacked so it can be displayed, this means that they have the files of the avatar stored in some way, whether it be on their device's storage or just in memory, either of these places can have data "stolen" from them.
Encryption doesn't make it impossible to rip avatars, just a little bit more difficult.

I hope some day they get to make it, but i have to say, that cvr has done it, it doesn't mean vrchat can do it easily, knowing that the bigger a project is, the harder it is to manage, and apart that they might have to make the avatar decryption backwards compatible with old versions that use unity's asset bundle format, i can expect that at any time someone will backwards engineer it and use it to make profit from other's work, just like with that webpage. For now i'll just vote and hope they think about making their own encryption method.
