Rotation angles do not work in-game. In play mode they do, but in-game it's like they're just removed

I'm not aware of this being a supported use case in the past. We run our own IK on all bones in the humanoid rig and for remote users that result is transmitted over the network (they don't run the IK locally). If you want to customize behavior more, you may need to make other child bones that ride along with the humanoid rig so that you aren't directly modifying humanoid bones.
